General
• Clupea harengus
• Atlantic herring (English) and Atlanticr Herring
Herring is found in the northeastern Atlantic Ocean, with strong concentrations in the North Sea, the Skagerrak, and the English Channel. The species primarily inhabits middle water layers between twenty and two hundred meters, depending on temperature, food availability, and seasonal currents. Herring forms large schools and follows distinct migration patterns that recur annually. In spring, the schools migrate toward coastal zones for food, while in summer and autumn they fan out into open water to take advantage of plankton-rich areas. The body is slender and fusiform, with a mobile caudal fin that facilitates rapid group movements. Herring respond strongly to changes in temperature and light, causing groups to move rhythmically within the water column. Their distribution extends across cold to temperate zones where plankton blooms are abundant. The interplay between structure, behavior, and current patterns makes herring one of the most dynamic pelagic species in the North Atlantic region.
Other information
Dutch new herring is prized for its full, mild flavor and fine texture, making it a favorite among fishmongers. The fishery is closely regulated, with quotas and monitoring to maintain sustainable stocks. Variations in plankton supply and temperature affect the fat content, but improved fishing and processing methods ensure consistent quality. Herring is traditionally eaten raw as well as used in modern cold preparations. Within professional supply chains, the species is an efficient product that fits well into the collaboration between a fish wholesaler and a supplier to the hospitality industry, allowing for seasonal peaks and consistent supply.
