General
• Sander lucioperca
• Pike-perch (English) and Zander (German)
Zander is found in cool freshwater lakes, wide rivers, and brackish water zones in Europe and Western Asia. The species lives primarily in middle water layers between two and twenty meters deep, depending on temperature, light, and food availability. Zander is a predatory fish that feeds on roach, smelt, and other small fish species with powerful lunges. The body is elongated and slightly streamlined, with a strong caudal fin that enables rapid acceleration. The species follows seasonal patterns, migrating towards shallower spawning zones in spring and seeking deeper, cooler water in warm summers. Their large eyes are adapted to low light, making zander primarily active at dusk. Their distribution extends along freshwater systems with stable oxygen levels and ample hiding places such as aquatic plants, bank structures, or soft bottom transitions. Thanks to their structure, behavior, and preference for clear, cool water, zander is an important species in European freshwater ecosystems.
Other information
Pikeperch is prized for its delicate flavor, firm texture, and wide culinary applications, making it popular with restaurants, fishmongers, and wholesalers. Catch and breeding are closely regulated because water quality, temperature, and spawning grounds determine population strength. Modern recirculation systems ensure a sustainable, stable supply of consistent quality. Pikeperch is widely used in fried dishes, classic European dishes, and modern, light applications. Within professional supply chains, the species is an efficient product that aligns closely with the collaboration between a fish wholesaler and a supplier to the hospitality industry, allowing businesses to count on a reliable, high-quality supply.
