General
• Solea solea
• Dover sole and Seezunge
Sole inhabits temperate coastal waters of the North Sea, the English Channel, and the eastern Atlantic Ocean. The species primarily inhabits sandy and silty bottoms at depths between ten and sixty meters, depending on temperature and food availability. Sole follows seasonal patterns, moving to slightly deeper water in winter and closer to coastal zones to forage during warmer months. The body is elongated, thin, and strongly flattened, with both eyes on the right side, which reflects its bottom-dwelling lifestyle. Its efficient camouflage allows it to lie shallowly buried in sediment and hunt from there for worms, small crustaceans, and benthic organisms. Its fins are narrow and flexible, allowing the fish to move controlled and almost silently over the seabed. Its distribution follows areas of stable current and oxygen-rich water, which provide favorable conditions for feeding and reproduction. Due to its structure, behavior, and habitat preferences, sole is a characteristic species within the North Sea fauna.
Other information
Prized for its refined flavor and tender texture, sole is a hugely popular fish for the hospitality industry, fishmongers, and wholesalers. The fishery is regulated through quotas and seasonal closures to ensure sustainable stocks. Water quality, temperature, and sediment structure can influence annual landings, but modern processing and sorting ensure consistent product quality. Sole is widely used in frying, poaching, and classic European dishes that emphasize subtle flavors. Within professional supply chains, this species provides a stable product that perfectly meets the needs of wholesalers and food service providers, ensuring a reliable and consistent supply.
