What is Prerigor?

The term prerigor consists of two parts: pre (which means beforehand) and rigor, referring to the natural rigor mortis process, the stiffness that occurs after death.

Rigor mortis normally develops within a few hours of being caught; pre-rigor salmon is processed before rigor mortis develops. Processing takes place within 4 hours, when the muscles are still completely relaxed.

The salmon is processed immediately, so the stiffening process occurs not in the whole fish, but in the fillet. This results in a product of exceptional quality.
